TASTING NOTES: A touch cloudy, not funky on the palate at all...more chalky with refreshing and inviting citrus and stone fruits on the palate, fun aperitif / brunch / anytime wine!
PRODUCTION NOTES: The grapes come from the Palu vineyard, located in a hilly area predominantly composed of limestone soils and are hand-harvested in early September. The grapes are gently pressed and separated between the first and second pressing. Fermentation takes place in stainless steel tanks and aged for four months on the lees where secondary fermentation takes place. Unfiltered. In contrast to the more familiar, filtered Prosecco, there is less sweetness in Col Fondo. And, unlike Champagne, there is no disgorgement. The resulting wine is cloudy and can have a funky, even sour nose and flavor, with yeasty sediment settling on the bottom of the bottle. A few even have a pleasantly bitter, lingering aftertaste. Col Fondo Prosecco wines are frizzante rather than spumante, so slightly less fizzy as well.
